The Best Restaurants in Scotland Now Sit on Two Maps
Edinburgh kept Scotland’s best-restaurant title in 2026, yet Michelin’s new stars went to two Highland kitchens that bet on isolation.
Scotland has 15 Michelin-starred restaurants in 2026, and seven of them sit in Edinburgh. The title that still travels, Best Restaurant in Scotland, stayed in the capital too.
On 9 June the National Restaurant Awards named the best restaurant in Scotland as Timberyard, the Radford family’s warehouse dining room, which placed 25th in the UK 100. The new Michelin jackets had already gone elsewhere. On 9 February in Dublin, Killiecrankie House near Pitlochry and 1887 in Torridon collected the country’s only new stars, and both chefs described their rooms as the middle of nowhere.
Edinburgh Still Takes the National Prizes
Ask any 2026 guide for the best restaurants in Scotland and Edinburgh answers first. Seven of the 15 starred rooms are in the capital or Leith: Avery, Condita, Heron, Lyla, Restaurant Martin Wishart, The Kitchin and Timberyard. Glasgow has two. The rest of the country shares six, including both two-star kitchens.
Timberyard opened in 2012 in a building put up in 1895, a props store and timber yard before it was a dining room. Guests still come in through a fire-red barn door. Andrew and Lisa Radford handed the floor to Ben, Jo and Abi, and head chef Bart Stratfold now runs an ingredient-led menu that the awards also named Cocktail List of the Year.
The UK 100 that night was a London story at the top, with Bouchon Racine first. Among the Scottish names, five of eight sit in Edinburgh. The Kinneuchar Inn in Fife, Glenturret Lalique in Crieff and Inver on Loch Fyne are the only ones that do not.
SCOTTISH ROOMS IN THE UK 100
| Restaurant | Place | UK rank |
|---|---|---|
| Timberyard | Edinburgh | 25 |
| Lyla | Edinburgh | 33 |
| The Kinneuchar Inn | Fife | 35 |
| The Glenturret Lalique | Crieff | 44 |
| The Kitchin | Edinburgh | 49 |
| Dogstar | Edinburgh | 51 |
| The Palmerston | Edinburgh | 65 |
| Inver | Argyll | 93 |
Lyla, Stuart Ralston’s seafood room on Royal Terrace, is the other Edinburgh heavyweight on that list, a ten-course menu in a 28-seat Georgian house. The Kitchin has held a star since 2007. Dogstar, James Murray’s Leith bistro, opened only in November 2025 and still landed at 51. The Palmerston, a converted bank run by James Snowdon and Lloyd Morse, is the neighbourhood end of the same table.
Two Highland Kitchens Called Themselves Middle of Nowhere
The 2026 Michelin Guide Great Britain and Ireland was launched in Dublin on 9 February. Twenty restaurants across the UK and Ireland took a first star. Scotland’s two were not in the cities that fill the award lists.
Killiecrankie House is a whitewashed former manse on the edge of the Cairngorms, opened in 2021 by Tom Tsappis and his wife Matilda Tsappis after they left London. He cooks a surprise tasting menu that borrows Japanese technique for Scottish fish, shellfish and garden produce. She runs the wine. Michelin called the house a dining destination with a personality of its own and singled out house-made oat tofu with fermented cream, broad beans and chilli.
We’re a tiny restaurant in the middle of nowhere in the Scottish Highlands and we’re chuffed.
Tom Tsappis, chef-owner, Michelin Guide ceremony in Dublin
The whole team, five people front and back of house, heard the news while they were in Japan. Tsappis later called the star completely overwhelming, and said the recognition meant more than they could put into words given the strain on the trade. Dinner is a set menu with no a la carte, up to 20 small courses, and a dinner tasting menu priced at £165. Lunch is £85. A Prestige drinks pairing is £330, and a 12.5% service charge is added. Twelve guests sit in the dining room, with extra seats at a chef’s counter in the kitchen.
The other new star is the 1887 restaurant at The Torridon, a 19th-century lodge on Upper Loch Torridon. Head chef Danny Young also told the Dublin room he was stuck in the middle of nowhere, between two mountains and the loch, with the produce and the staff doing the work. The kitchen’s £150 menu runs on shellfish, fresh fish and game from nearby estates. Inspectors praised a less-is-more plate and the Highland produce underneath it. 1887 took a Green Star on the same night.
Hospitality shortlists were still carrying Killiecrankie into autumn. Trade notices at the end of September named Tsappis a finalist for Hotel Restaurant Chef of the Year, months after the jacket.
Glasgow Holds Two Stars and a Cheaper Middle
Glasgow’s starred map is shorter and older. Cail Bruich, on Great Western Road, is led by Lorna McNee, who cooked at Andrew Fairlie at Gleneagles before she brought a star back to the West End. Unalome by Graeme Cheevers sits near Kelvingrove Park with a modern European tasting menu and a set lunch that Harden’s readers have long treated as the bargain in the room, at £55 against £135 for seven courses.
The heat in 2026 is one floor down from the stars. Sebb’s, the bar under Margo on Miller Street, took a Bib Gourmand and Michelin’s Exceptional Cocktail Award for the UK and Ireland. The Clarence in the West End and Angeethi by Sagar Massey in Cardonald joined the Bib list. Margo itself, from the Ox and Finch group, is a 140-cover sharing-plate room. Brett, Cail Bruich’s smaller sibling, sells a chef’s menu at £95.
In September the AA named Swadish by Ajay Kumar, in the Merchant City, Restaurant of the Year for Scotland. That prize did not move a Michelin needle, and it did not trouble the National Restaurant Awards 100, which had no Glasgow name at all. The city’s win is volume and price, not the trophy shelf.
What a Tasting Menu Costs in 2026
The number that keeps repeating is £165. Timberyard’s tasting menu is priced at £165, with a set lunch at £55. Killiecrankie charges the same £165 for dinner. 1887 is a little lower at £150. The bill after drinks and service is another meal.
SET MENUS AT THE 2026 FLAGSHIPS
| Restaurant | Dinner | Lunch or shorter menu |
|---|---|---|
| Timberyard, Edinburgh | £165 tasting | £55 set lunch |
| Killiecrankie House, Perthshire | £165 tasting | £85 lunch tasting |
| 1887 at The Torridon | £150 menu | Not listed separately |
Those prices buy different rooms. Timberyard is a city warehouse you can reach on foot from the Castle. Killiecrankie wants three to three and a half hours and a night in the manse if you want breakfast as another tasting. 1887 sits inside a hotel with kayaks on the loch. Condita in Edinburgh still works with six tables. Glenturret Lalique, Mark Donald’s two-star room at Scotland’s oldest working distillery, serves six tables a night.
Fife, Deeside and the Island Rooms Worth the Trip
Outside the two cities the lists keep finding the same kind of room: small, chef-owned, tied to a boat, a farm or an island road. The Kinneuchar Inn at Kilconquhar, a 17th-century pub on the Balcaskie Estate, placed 35th in the UK 100 and 20th in SquareMeal’s ranking, with a daily menu and pork chops the size of plates. The Peat Inn near St Andrews has held a star under Geoffrey Smeddle since he took over in 2006.
On Royal Deeside, Marcus Sherry’s Fish Shop in Ballater took a Bib Gourmand in 2026 and a SquareMeal top 100 place on seafood landed through Peterhead. On Mull, Ar Bòrd in Dervaig, Iain and Joyce Hetherington’s BYOB table in their own front room, was Scotland’s regional winner in the Good Food Guide’s 100 Best Local Restaurants, published on 24 July, and placed third on that UK list. Fourteen Scottish rooms made it.
ROOMS THE GUIDES KEEP PULLING NORTH AND EAST
- Loch Bay, Stein: An 18-seat seafood room on Skye that kept its star, with Michael cooking a Skye fruits de mer menu from the loch outside.
- Edinbane Lodge, Skye: Calum Montgomery’s 16th-century lodge, four AA Rosettes, a Harden’s top 100 place at 59, still the island’s loudest chef-led table.
- The Pierhouse, Port Appin: Langoustines from Loch Linnhe, hand-dived scallops, oysters from Loch Creran, listed in the 2026 Michelin Guide without a star.
- Inver, Loch Fyne: Pamela Brunton and Rob Latimer’s crofter’s cottage, a Green Star, 93rd in the UK 100, the restaurant critic Chitra Ramaswamy has called the most radical and exciting kitchen in Scotland.
Skye already had the tourist traffic. Mull’s living-room restaurant and Ballater’s fish shop are the other end of the same larder, and they are the names a national 75 keeps having to make room for if it wants to look like a country rather than a capital.
Harden’s 121 Entries Show Where Guides Look
Harden’s Best UK Restaurants 2026, the 35th edition, listed 121 Scottish restaurants. Fifty-one are in Edinburgh. Twenty-two are in Glasgow. Edinburgh was again the city with the most Top 100 rooms outside London, for the third year running, with seven Scottish names in that hundred.
WHERE THE 2026 GUIDES PUT SCOTLAND
- Michelin stars: 15 rooms; 7 in Edinburgh and Leith, 2 in Glasgow, 6 in the rest of the country.
- Harden’s: 121 Scottish entries; 51 in Edinburgh, 22 in Glasgow.
- SquareMeal UK 100: 11 Scottish restaurants, 6 of them in Edinburgh.
- National Restaurant Awards 100: 8 Scottish restaurants, 5 of them in Edinburgh.
Martin Wishart’s Leith waterfront room was Harden’s Scottish high-water mark at 36. Number One at the Balmoral came in at 93. Unalome scraped in at 98. Cail Bruich made the Top 100. The pattern is stable: Edinburgh takes the density, Perthshire takes the two-star polish, and the islands take the journey.
Restaurant Andrew Fairlie at Gleneagles and Glenturret Lalique in Crieff are the only two-star rooms at Gleneagles and Crieff. Stephen McLaughlin, head chef at Fairlie, said it was an incredible honour to have retained two stars for the 21st year, and pointed at the team and the guests who keep coming back. Scotland has none of the 10 three-star restaurants in the UK and Ireland guide.
Green Star Kitchens Cook Next to the Land
Four Scottish restaurants hold a Michelin Green Star in the 2026 guide for sustainable cooking: Timberyard, 1887, Inver, and The Free Company at Balerno, a regenerative farm at the foot of the Pentland Hills that serves communal tables Friday to Sunday on what the fields are doing that week.
That is the other split hiding under the 15-star headline. The trophy rooms in Edinburgh still draw on the same boats, deer and gardens as the Highland kitchens, then sell the plate in a city that already has the hotel beds. The Free Company grows the vegetables and raises the meat. Inver plates venison and langoustines a short drive from the boats. 1887 writes the garden and the estates into a hotel that was a shooting lodge.
Timberyard’s former warehouse near Edinburgh Castle is the room that can do both: a Green Star and the national title, a city address and a kitchen that still talks like a farm. That is why the 25th-place trophy did not move. The 2026 map still has a capital that wins the vote, and a country that keeps sending the new stars up the A9 and over to Torridon.
Anyone building a 75 from those guides will print Edinburgh first. The jackets handed out in Dublin went to two rooms whose chefs, on stage, could not stop saying how far away they were.
Frequently Asked Questions
How many Michelin-starred restaurants are in Scotland?
The 2026 guide lists 15 starred restaurants in Scotland, none of them with three stars, while the UK and Ireland guide as a whole now records 230 restaurants with at least one star and 10 with three. Two of Scotland’s 15 hold two stars and 13 hold one.
Which Scottish restaurants have two Michelin stars?
Restaurant Andrew Fairlie at Gleneagles in Auchterarder and The Glenturret Lalique in Crieff are the only two-star rooms. Fairlie’s signature smoked lobster is a five-hour infusion served over whisky barrel chips, and the kitchen has now held two stars for 21 years.
What is a Michelin Green Star?
A Green Star marks restaurants the inspectors judge to be leading in sustainable gastronomy. The 2026 guide awarded seven Green Stars across the UK and Ireland, and four Scottish rooms hold one: Timberyard, 1887 at The Torridon, Inver on Loch Fyne, and The Free Company in Balerno.
What is a Michelin Bib Gourmand?
A Bib Gourmand flags good cooking at a lower price than a star. New Scottish Bibs in 2026 include Mara in Aberdeen, The Clarence and Angeethi by Sagar Massey in Glasgow, and Sebb’s in Glasgow, which also took the Exceptional Cocktail Award for the UK and Ireland.
How long is dinner at Killiecrankie House?
The house asks guests to allow 3 to 3.5 hours for dinner and 1.5 to 2 hours for lunch, with no a la carte and no menu in hand until the end, because Tsappis found people sat in fear if they scanned the shrimp chocolate pudding too early.
